Ukwa is one of the most consumed local delicacies of the Eastern part of Nigeria. It is also called Breadfruit. It is highly proteinous in nature.

Serving 6


  • 3 cup of ukwa (breadfruit), peeled
  • 1 large onion, sliced
  • Salt to taste
  • 2 teaspoons of pepper
  • 2 seasoning cubes
  • 5 tablespoons of palm oil
  • ½ teaspoon of potash (kanwu) (optional)
  • ½ teaspoon of locust beans (ogili) (optional)


  • Wash the ukwa very well with clean water

  • Put in a pot, add water and cook for 10 minutes

  • Add the potash, cover and cook until the ukwa is soft

  • Add palm oil, onions, crayfish, maggi, pepper, salt, ogili and cook for 5 minutes

Ukwa can be eaten on its own or served with fried plantain (dodo) or rice.
